ASUN -Spiced Goat meat


Asun Is a Yoruba delicacy which is rapidly growing in popularity with other tribes.  Asun as the name implies is a (spicy/pepperish) Roasted grilled or smoked goat meat recipe. Asun is a
delicacy that is classified as Nigerian small chops and it is seen alongside other small chops in parties and get together. Not only is it pepperish but irresistible and delicious.
Ingredients for Asun. 

·         1 kg Goat meat (clean and cut with its skin)
·         3 scotch bonnet pepper/ atarodo (adjust to your taste)
·         1 medium onion
·         3 big stock cubes
·         Salt to taste
·         1 tablespoon thyme
·         1 tablespoon of vegetable oil
·         Black pepper (optional)
Preparation
Before you start with your preparation first
§  First dice or chop your onions (don’t grand it into a fine paste)
§  Chop your pepper and set aside
§  Preheat the grill or smoker until hot
Main preparation
Ø  Cut the Goat meat with its skin into big chucks. If the skin is not there, it wouldn’t be the real Asun
Ø  Wash the cut big chuck goat meat into a bowl
Ø  Add thyme, black pepper, crushed stock cubes.  You can add anymore spices and ingredients that you want
Ø  Mix the spices and goat meat together by gently rubbing them with your hands
Ø  Cover the bowl with a thin film. Put in fridge and leave to marinate for about an hour
Ø  Pour the chopped scotch bonnet pepper/  atarodo on it and set aside
Ø  Cut one big onion into four parts for later use
Ø  A little water
Making the Asun

v  After 1 hour or the number of hours you choose to marinate your Goat meat, put the Goat meat in a pot. You can use a pressure cooker to save time and gas.
v  Pour water to just half the level of the Goat meat, add the big chopped onions and start cooking at medium heat. We just add enough water that will dry up with Goat meat as it becomes tender.
v  When the Goat meat is well done, remove the big onion and then add salt to taste.
v  Increase the heat to high and stir constantly till the remaining liquid is absolved in to the Goat meat. We don’t want to lose the Goat flavor by throwing away the goat meat stock.
v  Lay the Goat meat flat on the grill rack.
v  Grill in the oven at 180°C or 360°F till the meat is brown all over. You need to be turning the meat from side to side till all the meat is all brown. Note, the meat should not be dry. This process should take about 15 minutes.
v  While you are grilling the meat, wash, cut and thread the greed bell pepper, red bell pepper and the remaining onions on tooth picks.
v  When the meat is well grilled, heat the vegetable oil in a dry clean pot.
v  Add the pepper and the thick from meat stock (if there is any) and fry for a bit.
v  Add the grilled Goat meat.
v  Stir very well till the pepper is evenly distributed on the Goat meat. The vegetable oil ensures that this happens and gives the Asun a nice glow.
v  That’s it! Serve with thread vegetables.
